Censo: the name of the sentimental value also indicates the “census”, the “choice” of the Favorita and Arneis grapes, harvested early to be vinified according to the Charmat method.
Favorita gives it finesse in perfumes and Arneis persistence in the mouth.

Colour: straw yellow.

Vineyard: Vignotto, Noce.

Land: sedimentation.

Gradient: 20%.

Exposure: South-East.

Golden yellow color, has complex aromas of musk and aromatic, sage and orange blossom.

The color is pale straw and the aroma is delicate with hints of rennet.

Delicate hors d’oeuvres and fish dishes.

It comes from a balance of technique and tradition.
After 22 months aging in oak casks, has a ruby red color;
